Because meals eaten at school play a major role in childhood health
and adult eating habits, the Physicians Committee for Responsible
Medicine (PCRM) grades the nutritional
quality of the menus offered by some of the nation’s largest
school districts participating in the U.S. Department of Agriculture’s
(USDA’s) National School Lunch Program (NSLP).
The results demonstrate a wide range of commitment to nutrition
among the nation’s schools. PCRM also found innovative nutrition
programs, special challenges confronting food service coordinators,
and opportunities for school districts to dramatically increase
the nutritional value of school lunches.
